Our forest honey is a mixture of honeydew from various trees, as well as part blackberry and other plants found in the forest. All forest honeys contain a lot of minerals, especially potassium and iron, as well as trace elements and resin components. For the production of forest honey, bees do not collect nectar from flowers, but honeydew. Honeydew is a sugary excretory product of aphids, bark lice and scale insects. Bees absorb this honeydew and produce forest honey from it. It usually gives the honey a strong, slightly malty flavor. This honey usually has a darker color than honey from flower nectar and remains liquid longer. The color ranges from light brown to reddish brown, with some varieties dark brown to black. Forest honey is not available every year. In order for the forest to honey, a mass infestation of honeydew producers is necessary. This, in turn, depends on the weather and many other factors.
